Goat's-beard grows in northern temperate areas around the globe. It seems strange that it is eaten in Italy, but apparently nowhere else. What do the Italians know that all the rest of us don't? Or vice versa? In Italy the young shoots are boiled in spiced water. Here it grows in woods in AK, AL, AR, CA, GA, IA, IL, IN, KY, MA, MD, ME, MI, MO, MS, NC, NJ, NY, OH, OK, OR, PA, SC, TN, VA, WA, WI, WV, AB, BC, NS, ON, QC, and YK.
