white bedstraw, Galium album
The tiny flowers of this bedstraw grow in great clouds up to four or five feet across. A literal bed of flowers. Gathered up and bagged, they really were used as bedding for people and animals. The stems are weak and easily crushed, so it's hard to imagine they are a very enduring solution for getting a good night's sleep. This is an Eurasian, spread to roadsides and fields.
